Why bakers prefer weight

A cup of flour can vary by tens of grams depending on scooping and humidity. A 120 g portion does not. Grams and ounces measure mass; cups measure volume. When a recipe lists weight, trust the scale and convert units—do not re-approximate with cups unless you accept variability.

Digital kitchen scales often toggle between g and oz (and sometimes lb:oz). Learn your scale’s tare button and unit button before you cream butter. Switching units mid-recipe without zeroing is a common way to double salt.

Avoirdupois ounces are the everyday food ounce: 1 oz = 28.349523125 g exactly by the international pound definition. Troy ounces are for precious metals—ignore them in the kitchen.

Grams, kilograms, and milligrams

Recipes use grams for most ingredients. Kilograms appear for large dough batches (1 kg flour). Milligrams appear in nutrition labels and caffeine or supplement contexts—1,000 mg = 1 g. Do not dose medicine from a kitchen scale unless the device and procedure are appropriate; this guide is about cooking units.

Prefer whole grams for home baking. Tenths of a gram help for yeast or salt in small loaves if your scale resolves them. Converting 0.25 oz of yeast to grams (about 7.1 g) is clearer than leaving fractional ounces on a sticky note.

Batch scaling: convert everything to grams, multiply by the scale factor, then convert back to ounces only if your audience insists. Scaling in mixed units invites rounding drift.

Ounces and pounds in US recipes

US recipes may list 8 oz of chocolate or 1 lb of butter. Remember 16 oz = 1 lb. Convert pounds to grams via ounces or use a kilogram ↔ pound converter for large amounts: 1 lb ≈ 453.592 g.

Fluid ounces measure volume, not mass. “8 fl oz of milk” is not the same measurement type as “8 oz of flour” by weight. Thick syrups and flour cannot be swapped between fl oz and oz without density.

When a US recipe says “ounces” for solids, it usually means weight ounces. When it says “fluid ounces” or uses cup marks on a jug, it means volume. Read the word “fluid” carefully.

Practical conversion habits

Exact kitchen factor: grams = ounces × 28.349523125. Ounces = grams ÷ 28.349523125. For mental checks, 30 g ≈ 1 oz is rough; 28 g ≈ 1 oz is better.

Tare the bowl, add the first ingredient to its target weight, tare again, add the next. Working entirely in grams reduces unit toggling. If the recipe is in ounces, either convert the whole recipe before starting or keep the scale in oz for that session—do not mix mid-bowl.

Print or note dual totals for shared family recipes: “butter 113 g (4 oz).” Dual labels prevent weekend arguments and burnt cookies.

Nutrition labels and package net weights

Package net weight may show grams and ounces together. Serving sizes sometimes mix mL and g. Convert only within the same quantity type. Calories per ounce change when you confuse weight ounces with fluid ounces of a drink.

Imported goods may show only metric net weight. US cooks can convert g → oz for intuition, but baking is usually easier if you stay in grams once you own a metric scale.

Portioning meal prep: convert the weekly protein target to grams, divide into containers, and ignore ounces until you publish a US-facing blog post.

When volume is still fine

Water and many thin liquids have density near 1 g/mL, so millilitres and grams are roughly interchangeable for rough work. Oils, honey, and packed brown sugar are not. When accuracy matters, weigh.

Spices in pinches stay volumetric by nature. Convert spice weights only for large commercial batches.
